Weather is perfect for a Chinese inspired brunch. This recipe features seasonal asparagus and shiitake mushrooms paired with classic Chinese ingredients like sesame oil, soy sauce, and hoisin sauce.
Ingredients (for 4)
- White rice - 2 cups
- Water - 4 cups
- Vegetable oil - 1 tbsp
- Asparagus - 1 bunch - trimmed and cut into 1 inch pieces
- Shiitake mushrooms - 8 oz - sliced
- Garlic cloves - 3 - minced
- Ginger - 1 tbsp - grated
- Hoisin sauce - 2 tbsp
- Soy sauce - 2 tbsp
- Sesame oil - 1 tbsp
- Salt - to taste
- Pepper - to taste
- Green onions - - thinly sliced on a bias
- Toasted sesame seeds - - for garnish

Step 1 - 🍚🍲💧Combine the rice and water in a pot and simmer until tender.

Step 2 - 🥦🍄🍳Heat oil in a skillet, add asparagus and mushrooms and stir-fry until tender and browned. Add garlic and ginger and stir-fry until fragrant. Pour hoisin sauce mixture and stir-fry until evenly coated.

Step 3 - 🍚🥦🌶️Divide rice among bowls and top with stir-fried vegetables. Garnish with green onions and sesame seeds before serving hot.
Additional
For even more protein, top the stir-fry with a poached egg. For extra crunch, add some chopped cashews or peanuts as garnish. Feel free to add any other vegetables you have, like bell peppers or carrots. Kids can help measuring and whisking the sauce, garnishing the dish with sesame seeds and green onions.
