For National Pie Day, we will be making a unique and decadent pie using the seasonal winter fruit- blood oranges. The filling of this pie is a mix of sweet and tart flavors, and the crust is made with almond flour for a gluten-free option. Perfect for a cold winter day in NYC!
Ingredients (for 8)
- Almond flour - 2 cups
- Unsalted butter - 1/2 cup - melted
- Granulated sugar - 1/4 cup
- Cornstarch - 1 tbsp
- Salt - 1/2 tsp
- Blood oranges - 4-5 - juiced (about 1 cup of juice) and 1 tbsp zest
- Granulated sugar - 3/4 cup
- Eggs - 3
- Egg yolk - 1
- Unsalted butter - 1/4 cup - cut into small pieces
- Whipped cream or meringue - - for topping

Step 1 - 🌡️🔥👨🍳Preheat oven to 350°F.

Step 2 - 🥣🥄💫In a bowl, mix together the almond flour, melted butter, sugar, cornstarch, and salt until well combined.

Step 3 - 🙌🥧💪Press the mixture into a 9-inch pie dish, making sure to cover the bottom and sides evenly.

Step 4 - 👨🍳👩🍳🍴Bake the crust for 10 minutes, or until it turns golden brown.

Step 5 - 🥚🍊🥄💫In a separate bowl, whisk together the blood orange juice, zest, sugar, eggs, and egg yolk until the mixture is smooth.

Step 6 - 🍲🔥🥄Transfer the mixture to a saucepan and warm it over low heat, while stirring constantly, until it thickens and coats the back of a spoon.

Step 7 - 🧈🥄💫Remove from heat and add the pieces of butter, stirring until it melts completely.
