This recipe is a modern take on the traditional Mexican dish - Chiles Rellenos. Poblano peppers are roasted, stuffed with a flavorful filling of black beans, quinoa, and chipotle spiced ground beef.     Preheat the oven to 400°F.

    Place the poblano peppers on a baking sheet and roast for 15-20 minutes until the skin is blistered and blackened.

    Transfer the peppers to a bowl, cover them with plastic wrap, and let them steam for 10 minutes.

    With a paper towel, gently remove the blackened skin from each pepper, and make a slit down the center of each pepper, and remove the seeds.

    Heat up a medium skillet with olive oil over medium-high heat. Add onions and garlic and sauté until brown (3-4 minutes).

    Add the ground beef and cook it until browned and cooked through (for another 5-6 minutes). Add the black beans, quinoa, tomato paste, chipotle chili powder, cumin powder, salt, and black pepper, and cook it for another 2-3 minutes until the mixture is heated through and well combined.

    Stuff each poblano pepper with the beef mixture (divide the mixture evenly) and place them in a baking dish.

    Bake at 350°F for 20 minutes, or until the cheese is melted and bubbly.

    Remove from the oven and allow the peppers to cool down for a few minutes.
