Experience the East in a glass with this cocktail recipe. Highlighting oyster-infused Baijiu - a traditional Chinese liquor - fused with inventive elements for a unique, seasonal twist.
Ingredients (for 2)
- Medium-sized fresh oysters - 2 - shucked and juice reserved
- Baijiu - 4 ounces
- Yuzu juice - 1 ounce
- Honey syrup - 1 ounce
- Saline solution - 4 dashes
- Finger lime globules - 2 spoonfuls - freshly scooped
- Homemade oyster liquor foam -
- Fresh thyme sprigs - a couple - for garnish
- Freshwater pearls - a few - for garnish
- Ice -
Preparation

Step 1 - π¦ͺπ₯π‘οΈBegin with infusing Baijiu liquor with oysters. Mix the shucked oysters and Baijiu in a vacuum bag and seal it. Sous vide this at 50Β°C for 1 hour. Once done, filter out and discard the oysters. The remaining oyster-infused Baijiu should be poured back into its bottle and stored in the fridge.

Step 2 - π―ππ§Take out the oyster-infused Baijiu and mix it with Yuzu juice, Honey syrup, and saline solution in a shaker. Add enough ice and give the shaker a rigorous shake for about 15 to 20 seconds, ensuring that your cocktail is chilled and well-mixed.

Step 3 - πΈππΏAdorn your cocktail glasses by hanging a few freshwater pearls on the rim of each glass.

Step 4 - πΉπ±πPour the prepared cocktail mix into the decorated glasses leaving some space on top. Add a layer of homemade oyster liquor foam. Garnish with some freshly scooped finger lime globules and a sprig of fresh thyme. Your cocktail is ready to serve.
Additional
Baijiu is China's national spirit traditionally used in celebrations. By using it, we are adding a part of Chinese culture and tradition into this creative cocktail. If you prefer a non-alcoholic version, use oyster-infused water instead of Baijiu. You can make the cocktail even more special by using smoked ice for a hint of thrilling complexity.
