This recipe litterally screams Spring! The star of our dish is Ramps, a wild leek with a beautiful garlicky flavour that's a herald of warmer days. Paired with succulent slow-cooked lamb shanks, this unique fusion creates an American classic with a creative twist.
Ingredients (for 2)
- 1 bunch ramps - 1 bunch - leaves finely chopped, bulbs and stems thinly sliced
- 2 lamb shanks - 2
- Beef broth - 2 cups
- Red wine - 1/2 cup
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Garlic - 2 cloves - crushed
- Loaf rustic bread - 1 Loaf - for serving

Step 1 - 🧂🐑🍽️Firstly, season the lamb shanks with 1 teaspoon of salt and a 1/2 teaspoon of ground black pepper evenly.

Step 2 - 🍳🔥🐑Heat 1 tablespoon of olive oil over medium heat. Add the seasoned lamb shanks to the pan and brown them on all sides. Once browned, transfer them to the slow cooker.

Step 3 - 🥬🍷🍳To the same pan, add the thinly sliced ramp bulbs and stems, sauté until fragrant. Add a 1/2 cup of red wine to the pan and scrape up any bits stuck to the pan. Pour this mixture over the lamb shanks in the slow cooker.

Step 4 - 🍲⏲️🍖Pour 2 cups of beef broth into the slow cooker. Set and cook it on low heat for 7-8 hours, or until the lamb shanks become tender.

Step 5 - 🥬🕰️👨🍳When there are 30 minutes left of cooking time, stir in the finely chopped ramp leaves to the slow cooker.

Step 6 - 🍖🥣🥖Serve the tender lamb shanks topped with the broth sauce, a sprinkle of fresh ramps, and a side of rustic bread.
