Ingredients (for 4)
- Medium sweet potato - 1 - cooked and chilled
- Freshly squeezed pomegranate juice - 2 cups
- Greek yogurt - 1.5 cups
- Rosewater - 1 tsp
- Honey - 2 tbsp
- Pistachios - 1/4 cup - crushed
- Pomegranate seeds - 1 tbsp - for garnish
- Ice cubes - 2 cups

Additional
This recipe can be made vegan by substituting Greek yogurt with any non-dairy yogurt and honey with maple syrup. A kid-friendly version could replace the rosewater with vanilla extract. While this is an excellent breakfast or post-workout option, you can even serve it as a healthy dessert.
