This smoothie recipe plays off the earthy sweetness of sweet potato, offset by the bright acidity of fresh pomegranate and the tang of yogurt, all rounded off by a whisper of rosewater, typical for the Middle Eastern cuisine. Ingredients (for 4)
- Medium sweet potato — 1 — cooked and chilled
- Freshly squeezed pomegranate juice — 2 cups
- Greek yogurt — 1.5 cups
- Rosewater — 1 tsp
- Honey — 2 tbsp
- Pistachios — 1/4 cup — crushed
- Pomegranate seeds — 1 tbsp — for garnish
- Ice cubes — 2 cups

A final fox tip
