Ingredients (for 4)
- Trout fillets, fresh, skin-on - 4
- Lemon - 2 - zested and juiced
- Orange - 2 - zested, peeled and segmented
- Cherry tomatoes - 2 cups - halved
- Red onion - 1 - finely chopped
- Fresh parsley - 1 bunch - chopped
- Fresh cilantro - 1 bunch - chopped
- Olive oil - 4 tablespoons
- Salt - to taste

Step 1 - 🍋🍊🧅In a bowl, mix zest of lemons and oranges, orange segments, chopped red onion, and half of each the chopped parsley and cilantro. Drizzle a tablespoon of olive oil over it and add a pinch of salt. Toss to combine all ingredients.

Step 2 - 🐟🍋🌿Sprinkle the trout fillets with salt, lemon juice, and the remaining chopped parsley and cilantro. Ensure that fillets are fully covered in marinade.

Step 3 - 🍳🔥🐟Heat the remaining olive oil in a cast-iron pan over medium heat. Add the fillets, placing them skin-side down. Cook for about 5 minutes until the skin becomes crispy. Flip the fillets and sear the other side for two more minutes.

Step 4 - 🍽️🍅🌿Divide the cooked trout fillets onto plates. Spoon generous amounts of the earlier prepared salsa over each fillet, scatter the halved cherry tomatoes around, and garnish with extra fresh herbs.
