For this unique recipe, we combine the flavors of the Mediterranean with French techniques, using a seasonal and healthy ingredient - artichokes. This recipe is fresh, light, and perfect for an outdoor Spring gathering.
Ingredients (for 4)
- Artisan bread - 4 slices
- Large artichoke - 4 - cleaned and halved
- Vegetable broth - 1/2 cup
- Garlic cloves - 2 - finely chopped
- Olive oil - 1/4 cup
- Fresh lemon juice - 1/4 cup
- Lemon zest - 2 tsp
- Parsley - 1 tbsp - chopped
- Salt - - to taste
- Pepper - - to taste

Step 1 - π₯π©βπ³π¨βπ³Preheat the oven to 350Β°F

Step 2 - π΄πΏπ₯Arrange the artichokes on a baking sheet and drizzle with olive oil, garlic, salt, and pepper. Roast for 30 minutes.

Step 3 - βοΈπ°οΈπRemove from the oven and let them cool for 5 minutes.

Step 4 - π₯ππΆοΈRemove the leaves from each artichoke halve and place them into a bowl. Add lemon zest, 1/4 cup of olive oil, and lemon juice and mash until it forms a paste.

Step 5 - ππ₯πToast the bread slices for 3 minutes until golden and crispy.

Step 6 - π΄π₯πΏSpread the artichoke paste over each slice of bread and sprinkle with chopped parsley.
