This quick Chinese-inspired skillet pairs blistered sweet peppers with crisp-edged tofu and late-season peach. Chinkiang vinegar, Shaoxing wine, ginger, garlic, and chili crisp create a glossy sweet-tangy lacquer that makes the colorful produce shine.
Ingredients (for 4)
- Mixed-color bell peppers — 3 large — seed and cut into 1-inch squares
- Extra-firm tofu — 14 ounces — press dry and tear into rough 1-inch pieces
- Firm-ripe peach — 1 large — pit and cut into thin wedges
- Cooked jasmine rice — 3 cups — keep warm
- Cornstarch — 2 tablespoons
- Roasted peanuts — 1/4 cup — coarsely chop
- Shaoxing wine or dry sherry — 2 tablespoons
- Chinkiang black vinegar — 2 tablespoons
- Low-sodium soy sauce or tamari — 1 1/2 tablespoons
- Maple syrup or honey — 1 tablespoon
- Chili crisp — 1 tablespoon, plus more for serving
- Garlic — 2 cloves — finely grate
- Fresh ginger — 1 tablespoon — finely grate
- Toasted sesame oil — 1 teaspoon
- Fresh cilantro leaves — 2 tablespoons
- Toasted sesame seeds — 1 teaspoon
- Neutral oil — 2 tablespoons — divide
- Kosher salt — 1/2 teaspoon
