Additional
Shiitake mushrooms and Chinese broccoli are excellent sources of vitamins, fiber, and antioxidants. To make the quiche more interesting and seasonal, you can replace butternut squash with pumpkin or sweet potato. For a non-vegetarian version, try adding cooked bacon or ham. Kids can help by cubing the butternut squash, slicing the mushrooms, cracking the eggs, or whisking the filling.
