This unique brunch dish is a perfect blend of the Japanese flavour palette with the seasonal vegetable, carrots. The sweetness of the carrots beautifully balances with the umami richness of miso, all encased in a fluffy Soufflé omelette.
Ingredients (for 4)
- Carrots - 2 - thinly sliced and glazed with a mix of 1 tablespoon miso and 1 tablespoon honey
- Eggs - 8 - separated
- Heavy cream - 2 tablespoons
- Scallions - 4 - finely chopped
- Sesame seeds - 1 tablespoon - for garnish
- Steamed rice - to serve
- Olive oil - 2 tablespoons
- Salt - to taste

Step 1 - 🥕🍯🍳Glaze the carrot slices with the miso-honey mix and sauté them in a pan until caramelised. Set aside a few for garnish.

Step 2 - 🥚🥛🧅Beat the egg yolks with the cream, salt, and half the chopped scallions.

Step 3 - 🥚🥣🌬️In a separate bowl, whip the egg whites into stiff peaks.

Step 4 - 🔄🥚☁️Gently fold the yolk mixture into the egg whites, keeping the mixture fluffy.

Step 5 - 🍳🔥🥕Heat olive oil in a pan, add the omelette mixture and arrange the leftover caramelised carrots on top. Cover and cook on low heat for about 10 minutes.

Step 6 - 🌰🥬🍚Once the omelette is set but still slightly jiggly, garnish with sesame seeds and remaining scallions. Serve with miso-glazed carrots and steamed rice on the side.
