A little about this dish

These quick tostadas lean into Mexican-inspired bright flavors without feeling predictable: sweet roasted-sautéed carrots get glossed with lime and smoky chile, then layered over creamy mashed avocado and a quick black bean smash. Toasted pepitas and crumbled feta add crunch and contrast, while radish and herbs keep everything fresh, colorful, and especially photogenic.

  • Corn tortillas4 small
  • Black beans1 can (15 oz)drained and rinsed

  • Chipotle powder1/2 tsp
  • Ground cumin1/2 tsp
  • Smoked paprika1/2 tsp
  • Olive oil2 tbsp
  • Salt3/4 tspdivided
  • Black pepper1/4 tsp

Preparation

  1. Step 1 — 🥕🫒🌶️
In a bowl, toss the carrot ribbons and sliced carrots with 1 tbsp olive oil, honey or maple syrup, chipotle powder, smoked paprika, cumin, half the lime juice, 1/4 tsp salt, and black pepper until well coated.
  2. Step 2 — 🍳🥕✨
Heat a large skillet over medium-high heat. Cook the carrots for 5 to 7 minutes, tossing often, until lightly blistered, glossy, and just tender. Transfer to a plate.
  3. Step 3 — 🫘🧄🥄
In the same skillet, warm the black beans with the grated garlic, 2 tbsp water, and 1/4 tsp salt for 2 minutes. Lightly mash until chunky and spreadable.
  4. Step 4 — 🥑🍋🤏
Mash the avocado in a small bowl with the remaining lime juice and a pinch of salt until mostly smooth.
  5. Step 5 — 🌮🔥🥘
Wipe out the skillet if needed. Add the remaining 1 tbsp olive oil and cook the corn tortillas one at a time for 1 to 2 minutes per side until golden and crisp. Drain briefly on a plate.
  6. Step 6 — 🥑🫘🍽️
Spread each crisp tortilla with mashed avocado, then add a layer of smashed black beans.
  7. Step 7 — 🥕⬆️😋
Pile the glazed carrots on top, mixing the ribbons and sliced carrots for texture and height.
  8. Step 8 — 🌿🧀🍋
Top with radish slices, crumbled feta, toasted pepitas, and cilantro. Serve right away with lime wedges.

A final fox tip

For extra drama, save a few raw carrot ribbons and toss them with lime and salt to layer on at the end for contrast. You can swap feta for queso fresco, or add a spoonful of Greek yogurt mixed with lime zest for a cool creamy finish.
