These quick tostadas lean into Mexican-inspired bright flavors without feeling predictable: sweet roasted-sautéed carrots get glossed with lime and smoky chile, then layered over creamy mashed avocado and a quick black bean smash. Toasted pepitas and crumbled feta add crunch and contrast, while radish and herbs keep everything fresh, colorful, and especially photogenic.
Ingredients (for 2)
- Carrots - 4 medium - peeled; 2 shaved into ribbons and 2 thinly sliced on the bias
- Corn tortillas - 4 small
- Black beans - 1 can (15 oz) - drained and rinsed
- Avocado - 1 large - peeled and pitted
- Radishes - 3 - very thinly sliced
- Feta cheese - 1/3 cup - crumbled
- Pepitas - 3 tbsp - toasted
- Cilantro - 1/4 cup - roughly picked leaves and tender stems
- Lime - 1 whole - half juiced and half cut into wedges
- Garlic - 1 small clove - finely grated
- Honey or maple syrup - 2 tsp
- Chipotle powder - 1/2 tsp
- Ground cumin - 1/2 tsp
- Smoked paprika - 1/2 tsp
- Olive oil - 2 tbsp
- Salt - 3/4 tsp - divided
- Black pepper - 1/4 tsp

Step 1 - 🥕🫒🌶️In a bowl, toss the carrot ribbons and sliced carrots with 1 tbsp olive oil, honey or maple syrup, chipotle powder, smoked paprika, cumin, half the lime juice, 1/4 tsp salt, and black pepper until well coated.

Step 2 - 🍳🥕✨Heat a large skillet over medium-high heat. Cook the carrots for 5 to 7 minutes, tossing often, until lightly blistered, glossy, and just tender. Transfer to a plate.
