- Chipotle chile in adobo — 1/2 — finely mince
- Ancho chile powder — 1 teaspoon
- Small jalapeño — 1 — deseed and finely mince
- Pepitas — 2 tablespoons — divide
- Cilantro — 2 tablespoons, plus extra to finish — finely chop the leaves
- All-purpose flour — 3/4 cup
- Whole milk — 1/4 cup, plus 1 tablespoon for brushing — warm; reserve 1 tablespoon for brushing
- Unsalted butter — 1 tablespoon — melt
- Instant yeast — 1/2 teaspoon
- Piloncillo or light brown sugar — 1 tablespoon — finely grate the piloncillo, if using
