Crispy Trout with Charred Corn, Peach-Tomato Spoon Salad & Oregano Green Sauce
Daily Recipe: August 11, 2026
This summery main leans into muggy-weather cooking with quick-seared fish, barely-cooked sweet corn, and a juicy tomato-peach spoon salad that feels vibrant instead of heavy. Oregano shows up in a bright green drizzle that tastes unmistakably American garden-fresh, especially with basil, lemon, and olive oil. The result is colorful, seasonal, and polished enough for a photo while still being very doable on a weeknight.
Ingredients (for 2)
- Fresh oregano - 1 packed cup - leaves and tender stems, divided
- Rainbow trout fillets - 2 fillets (about 6 oz each) - pin bones removed, skin on
- Fresh sweet corn - 2 ears - kernels cut off
- Peach - 1 large - ripe but firm, cut into thin wedges
- Cherry tomatoes - 1 cup - halved
- Radishes - 2 small - very thinly sliced
- Fresh basil - 1/2 cup loosely packed - leaves, divided
- Lemon - 1 whole - zested and juiced, divided
- Garlic - 1 small clove - grated
- Shallot - 1 small - finely minced
- Plain greek yogurt - 2 tablespoons
- Honey - 1 teaspoon
- Crushed red pepper flakes - 1/4 teaspoon
- Flaky sea salt - for finishing
- Black pepper - 1/2 teaspoon - freshly ground
- Olive oil - 4 tablespoons - divided
- Kosher salt - 1 teaspoon plus more to taste
Preparation
-
Step 1 - πΏππ₯£Blend 3/4 cup oregano, 1/4 cup basil, grated garlic, Greek yogurt, 2 tablespoons lemon juice, 1 teaspoon lemon zest, honey, 2 tablespoons olive oil, 1/4 teaspoon kosher salt, and a few grinds of black pepper until smooth and bright green. Add 1 to 2 teaspoons water if needed to loosen, then set aside.
-
Step 2 - ππ§ποΈPat the trout fillets very dry. Season both sides with the remaining kosher salt and black pepper, then let them sit while you prepare the salad.
-
Step 3 - ππ π₯In a medium bowl, combine the peach wedges, cherry tomatoes, radishes, shallot, remaining 1/4 cup oregano, and remaining basil leaves. Add 1 tablespoon lemon juice, red pepper flakes, and 1 tablespoon olive oil, then toss gently and let sit for 10 minutes.
-
Step 4 - π½π₯π₯Heat a cast-iron or heavy skillet over medium-high heat. Add the remaining 1 tablespoon olive oil and cook the corn kernels for 2 to 3 minutes, stirring occasionally, until lightly charred but still crisp. Add the corn to the salad and toss gently. Taste and adjust with more salt or lemon if needed.
-
Step 5 - π³ππWipe out the skillet if needed and return it to medium-high heat. Add a small drizzle of oil if the pan looks dry. Place the trout fillets skin-side down and press lightly for the first 20 seconds so the skin stays flat.
-
Step 6 - β²οΈπ β¨Cook the trout mostly on the skin side for 4 to 5 minutes until the skin is crisp and the fish is nearly opaque most of the way up. Flip carefully and cook 30 seconds to 1 minute more, just until barely cooked through.
-
Step 7 - π½οΈπΏπSpoon and spread some oregano green sauce onto each plate. Add the charred corn and peach-tomato salad, then place the crispy trout on top.
-
Step 8 - ππ§πTop with extra basil, a little lemon zest, flaky sea salt, and a few drops of olive oil. Serve right away.
Additional
If trout is unavailable, use arctic char, striped bass, or salmon. For an even cooler-feeling version, serve the corn-peach salad fully chilled and cook the fish at the last minute. The oregano sauce also works beautifully on grilled zucchini or toasted sourdough, so make extra if you want the plate to feel even more abundant.
