For this special Father's Day barbecue, we're going to create a unique twist on the classic Steak and Potatoes. It's a Beef Tenderloin with Grilled Hasselback Potatoes and Chimichurri Sauce. We chose beef tenderloin for its tender and juicy texture. The Hasselback potatoes will offer an impressive look and perfect crunchiness. Lastly, the chimichurri sauce is the bright, herby-tangy finish that ties together the dish.
Ingredients (for 4)
- Beef tenderloin - 2 lbs - trimmed
- Medium potatoes - 4 - turned into Hasselback potatoes
- Fresh parsley - 1 cup - finely chopped
- Fresh cilantro - 1 cup - finely chopped
- Garlic cloves - 3 - minced
- Red wine vinegar - 3 tbsp
- Crushed red pepper flakes - 1 tsp
- Extra virgin olive oil - 1/2 cup
- Kosher salt - to taste
- Black pepper - to taste

Step 1 - π‘οΈπ₯©π₯Preheat your grill on high. Lightly oil the grill grates. Season your 2 lbs of trimmed beef tenderloin and 4 medium hasselback potatoes with kosher salt and black pepper to taste.

Step 2 - π₯ππPut the beef tenderloin and potatoes on the grill. Flip the beef occasionally, grilling it to your preferred doneness. This takes about 15-20 minutes for medium-rare. Also, turn the potatoes occasionally until they're crispy on the outside and cooked through.

Step 3 - πΏπΆοΈπ₯£While the meat and potatoes are grilling, prepare the chimichurri sauce. In a bowl, combine 1 cup of finely chopped fresh parsley, 1 cup of finely chopped fresh cilantro, 3 minced garlic cloves, 3 tbsp of red wine vinegar, 1 tsp of crushed red pepper flakes, and half a cup of extra virgin olive oil.
