Green Kiwi and Cucumber Smoothie

This refreshing Chinese-inspired smoothie blends seasonal fruits and vegetables like cucumber, kiwi, and ginger for a perfect summer treat. The addition of chia seeds gives it a a nice texture and a boost of protein too.
Ingredients (for 4)
- Cucumber - 2 cups - chopped
- Kiwi - 2 - peeled and chopped
- Ginger - 1 inch - peeled and grated
- Honey or maple syrup - 1 tbsp
- Chia seeds - 2 tbsp
- Unsweetened almond milk - 1 cup
- Ice cubes -
Preparation

Step 1 - π₯π₯π§ππBlend the 2 cups of chopped cucumber, 2 chopped kiwis, peeled and grated 1 inch of ginger, and 1 tbsp of honey or maple syrup until smooth.

Step 2 - πΏπ₯Add 2 tbsp of chia seeds and 1 cup of unsweetened almond milk and blend again.

Step 3 - βοΈπΉAdd ice cubes to your preference for thickness and serve immediately.
Additional
For a more refreshing treat, you can also freeze your cucumber and kiwi before blending them. Feel free to substitute the almond milk with any other plant-based milk or Greek yogurt if you prefer a creamier consistency. Kids can definitely help with peeling and chopping the fruits and grating the ginger.
