A little about this dish
This refreshing Chinese-inspired smoothie blends seasonal fruits and vegetables like cucumber, kiwi, and ginger for a perfect summer treat. The addition of chia seeds gives it a a nice texture and a boost of protein too.
Ingredients (for 4)
- Cucumber — 2 cups — chopped
- Kiwi — 2 — peeled and chopped
- Ginger — 1 inch — peeled and grated
- Honey or maple syrup — 1 tbsp
- Chia seeds — 2 tbsp
- Unsweetened almond milk — 1 cup

Preparation

Step 1 — 🥒🥝🧄💖🌀Blend the 2 cups of chopped cucumber, 2 chopped kiwis, peeled and grated 1 inch of ginger, and 1 tbsp of honey or maple syrup until smooth.

Step 2 — 🌿🥛Add 2 tbsp of chia seeds and 1 cup of unsweetened almond milk and blend again.

A final fox tip
For a more refreshing treat, you can also freeze your cucumber and kiwi before blending them. Feel free to substitute the almond milk with any other plant-based milk or Greek yogurt if you prefer a creamier consistency. Kids can definitely help with peeling and chopping the fruits and grating the ginger.
