We're going to celebrate India Independence Day with a delicious and breathtaking Biryani. This iconic Indian dish bursts with aromatic spices, delicious chicken, and fragrant basmati rice, all cooked together in a sublime symphony of flavors.
Ingredients (for 4)
- Basmati rice — 2 cups — soaked and drained
- Chicken — 1 lb — cut into pieces
- Onion — 3 — finely sliced
- Tomato — 2 — pureed
- Garlic — 4 cloves — crushed
- Ginger — 1 piece — crushed
- Green chilli — 2 — split
- Yogurt — 1 cup — none
- Turmeric powder — 1 tsp — none
- Chicken masala — 2 tsp — none
- Fresh mint leaves — 1/2 cup — chopped
- Hard-boiled eggs — 4 — sliced
- Cashews — 1/4 cup — none
- Raisins — 1/4 cup — none
- Red bell pepper — 2 — sliced
- Green bell pepper — 2 — sliced
- Vegetable oil — 4 tbsp — none
- Salt — to taste — none
Preparation

Step 1 — 🍳🌰🧄Heat the vegetable oil in a pan and sauté the finely sliced onions until they turn golden brown. Add the crushed ginger and garlic, continue sautéing for a couple of minutes.

Step 2 — 🍅🌶️🍗Add the pureed tomatoes, split green chillies to the pan. Then, incorporate the chicken pieces, turmeric powder, chicken masala, salt, and yogurt. Let everything cook until the chicken becomes tender.

Step 3 — 🍚💦🧂Meanwhile, in a separate pot, parboil the soaked and drained basmati rice with a pinch of salt.

Step 4 — 🍛🍃🥜Layer the partially cooked rice over the chicken curry. Garnish with the chopped fresh mint leaves, cashews, raisins, and sliced bell peppers.
