Ingredients (for 2)

Preparation

  1. Step 1 - 🌡️🔥👨‍🍳
Preheat the oven to 400 degrees F.
  2. Step 2 - 🦞🔪🐚
Cut a slit lengthwise through the top of the shell. Separate the meat from the shell, keeping it attached at the base. Gently lift the meat through the slit and let it rest on top of the shell.
  3. Step 3 - 🥔💦🍴
Bring the cubed potatoes to a boil in salted water. Cook until tender, about 15 minutes.
  4. Step 4 - 🥔🍶🧈
Mash the potatoes with the heavy cream, truffle oil, butter and milk until smooth. Season with salt and pepper to taste.
  5. Step 5 - 🟠🌰🍲
Heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the diced beets and enough water to cover them by 1 inch. Simmer until the beets are tender, about 20 minutes. Transfer to a blender or food processor and blend until smooth. Season with salt and pepper to taste.
  6. Step 6 - 🔥🦞🍴
Place the lobster tails on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake in the preheated oven for 12-15 minutes until the meat is cooked through.
  7. Step 7 - 🍽️🥔🦞
Place a generous portion of truffle mashed potatoes on each plate. Top with a spoonful of golden beet puree and a lobster tail.
