Inspired by the rich flavours of the Mediterranean, this recipe gives a twist to classically American corn on the cob. Our star ingredients are summer fresh corn, feta cheese and a vibrant mix of herbs including dill, mint, and parsley to create a tangy, creamy feta and herb butter that takes this beloved side dish to new, gourmet heights.
Ingredients (for 4)
- Ears of corn - 4 - husks and silk removed
- Feta cheese - 1 cup - crumbled
- Unsalted butter - 1/2 cup - softened
- Fresh dill - 1 tablespoon - finely chopped
- Mint leaves - 1 tablespoon - finely chopped
- Parsley - 1 tablespoon - finely chopped
- Pink peppercorns - 1/2 teaspoon - crushed
- Lemon zest - 1/2 teaspoon - none
- Olive oil - 1 tablespoon - none
- Salt - to taste - none
Preparation

Step 1 - π½π°π₯Bring a pot of salted water to boil, then add the corn cobs and boil for 10 minutes. Drain.

Step 2 - π§π§πΏπIn a bowl, mix together the feta cheese, softened butter, dill, mint, parsley, crushed pink peppercorns, and lemon zest until well combined.

Step 3 - π½π₯π¦Heat a grill or grill pan over medium-high heat. Lightly oil the corn cobs and grill them, turning occasionally, for about 10 minutes or until they start to char slightly.

Step 4 - π½π§π§Remove from the grill and while still hot, generously smear the feta-herb butter over the corn. It will start to melt and seep into the kernels in the most inviting way. Season with a sprinkle of salt if required and serve.
Additional
Reinvent this dish each time with different herbs to suit your taste. You can also roll the buttered corn in additional feta or herbs to make it extra decadent. This dish is sure to stand out on the plate and on your feed, making it the star of your summer BBQs.
