Preparation

    Heat 2 tbsp of olive oil in a pan over medium heat and sauté the oyster mushrooms till golden brown, about 5-7 minutes. Set aside.

    In the same pan, add the remaining oil and sauté onions and garlic till fragrant. Add the bell peppers and zucchini and cook till they're tender.

    Meanwhile, cook orzo in a pot of salted boiling water till al dente.

    Once the orzo is cooked, drain and combine with the sauteed vegetable mix in the pan.
