This dish highlights the versatility and rich flavor profile of Oyster Mushrooms, teamed with seasonal Mediterranean ingredients. It's a healthful and inviting dinner option that is anything but predictable.
Ingredients (for 2)
- Oyster mushrooms - 200g - cleaned and sliced
- Whole wheat orzo - 150g - uncooked
- Feta cheese - 100g - cut into cubes
- Bell peppers - 1 small each of red, yellow and green - finely chopped
- Zucchini - 1/2 cup - diced
- Red onion - 1/2 - finely chopped
- Garlic - 2 cloves - minced
- Parsley - a handful - finely chopped
- Lemon - 1/2 - zested and juiced
- Olive oil - 3 tbsp
- Salt and pepper - to taste
Preparation

Step 1 - 🍳🍄⏲️Heat 2 tbsp of olive oil in a pan over medium heat and sauté the oyster mushrooms till golden brown, about 5-7 minutes. Set aside.

Step 2 - 🍳🌰🌶️In the same pan, add the remaining oil and sauté onions and garlic till fragrant. Add the bell peppers and zucchini and cook till they're tender.

Step 3 - 🍳🥣🍝Meanwhile, cook orzo in a pot of salted boiling water till al dente.

Step 4 - 🍝🥦🥘Once the orzo is cooked, drain and combine with the sauteed vegetable mix in the pan.

Step 5 - 🍋🧂🌿Toss in the mushrooms and mix well. Season the medley with lemon juice, zest, chopped parsley, salt, and pepper.

Step 6 - 🔥🧀🍳Place the feta cubes on a grill pan over high heat until charred on all sides.

Step 7 - 🍽️🍝🧀Serve the orzo medley warm, topped with charred feta cubes.
Additional
Squeeze a little more lemon juice on top for an added freshness before digging in. You can also add other vegetables as per preference. Tofu can be a good vegan replacement for feta cheese.
