Meet your new breakfast staple that will transport you to the depths of Middle Eastern culinary traditions, with an unexpected twist - Fresh Oysters! Baked in a creamy tahini sauce and paired with tabouleh-inspired salsa for a refreshing zing, this dish is flavor-packed and yet light and vibrant, perfect for a moody day.
Ingredients (for 4)
- Fresh oysters - 12 - shucked and on half shell
- Tahini - 1 cup - none
- Lemon juice - 3 tablespoons - none
- Garlic - 2 cloves - crushed
- Fresh parsley - 1/2 cup - chopped
- Bulgur wheat - 1/2 cup - soaked and drained
- Fresh tomato - 1 medium - diced
- Small cucumber - 1 - diced
- Fresh mint leaves - 1/4 cup - chopped
- Extra virgin olive oil - 3 tablespoons - none
- Salt - to taste - none
- Pepper - to taste - none
Preparation

Step 1 - β²οΈπ₯πPreheat the oven to 400F degrees.

Step 2 - ππ²π₯Mix tahini, half of the lemon juice, garlic, salt and pepper in a bowl. Arrange the shucked oysters on a baking tray and spoon the tahini mixture over each oyster.

Step 3 - π₯π½οΈβ°Put the tray in the preheated oven and bake for 10 minutes, or until the tahini on the oysters turns lightly golden and bubbles appear.

Step 4 - πΏπ π₯In a separate bowl, mix together soaked bulgur wheat, diced tomato, diced cucumber, chopped parsley and mint, the remaining lemon juice, olive oil, and salt and pepper to taste.

Step 5 - π½οΈπ¦ͺπ₯Serve the freshly baked oysters hot, alongside the freshly prepared tabouleh salsa.
Additional
Though this dish brings in Middle Eastern flare, it still keeps the oysters as the star with its straightforward preparation. You can even swap the tabouleh for couscous if you like. Not to mention, kids will love to help mix the salsa!
