This creative twist to the classic American cuisine features a 'Parsley-Infused Roast Chicken' with a 'Crispy Sweet Potato Hasselback' on the side. Ingredients (for 2)

Preparation

  1. Step 1 - 🔥⏲️👩‍🍳
    Preheat your oven to 375F.
  2. Step 2 - 🔪🧈🌿
    Combine the finely chopped Parsley, softened Butter, chopped Garlic, Salt, and Pepper to form the Parsley butter.
  3. Step 3 - 🐓🤲💦
    Gently lift the skin of the Chicken, and stuff half the Parsley butter in between the skin and meat.
  4. Step 4 - 🐓🧈👐
    Rub the remaining Parsley butter on the outside of the Chicken.
  5. Step 5 - 🐓🍽️⏲️
    Place the Chicken in a roasting tray and roast in the preheated oven for about 1 and a half hour.
  6. Step 6 - 🍠🔪👩‍🍳
    Prep your Sweet Potatoes into 'Hasselback' style. Slice into the top of the Sweet Potato, stopping before you cut all the way through.
  7. Step 7 - 🍠🧂🔥
    Drizzle Olive Oil onto the Potatoes, sprinkle with Salt, Pepper, and Rosemary. Place the Potatoes in the oven alongside the Chicken for the last 45 minutes of roasting. The Sweet Potatoes should be crispy on top and soft in the middle.
  8. Step 8 - 🐓⏲️😌
    Remove the Chicken from the oven, let it rest for 10 minutes before slicing.
  9. Step 9 - 🍽️✨🥳
    Plate the sliced Chicken with the Sweet Potato Hasselback on the side.

Additional

To make it more fun, kids can help with preparing the Parsley butter and the easy Hasselback Potatoes. For a veggie twist, replace Chicken with a big Cauliflower head, following the same steps. The roast cauliflower absorbs the Parsley butter nicely, giving it a wonderful flavor.
