- Sweet potato - 1 large - peeled and sliced into rounds
- Plain greek yogurt - 1/4 cup
- Adobo sauce (from chipotle peppers in adobo sauce can) - 1/2 tbsp
- Honey - 1/2 tbsp
- Pomegranate seeds - 1/4 cup
- Pepitas - 2 tbsp
- Salt - 1/4 tsp
- Olive oil - 1 tbsp
