This brunch leans into late-summer produce and the bright, cooling side of Chinese-inspired flavors: delicate chive-speckled egg ribbons, silky soy-kissed yogurt, juicy smashed cucumbers, and sweet peak-season tomatoes. Instead of something heavy, itβs layered and refreshing, with a jammy tea egg for richness and chili crisp for contrast. The result feels elegant, modern, and vivid on the plate while still being deeply savory and satisfying.
Ingredients (for 2)
- Chinese chives - 1 packed cup - finely sliced into 1-inch lengths
- Large eggs - 6 - divided
- Greek yogurt - 1/2 cup
- Medium ripe tomatoes - 2 - cut into wedges
- Persian cucumbers - 4 - lightly smashed and cut into bite-size pieces
- Scallion - 1 - very thinly sliced
- Fresh ginger - 2 tsp - finely grated and divided
- Small garlic clove - 1 - finely grated
- Cilantro leaves - 1/4 cup - for garnish
- White sesame seeds - 2 tsp - toasted
- Chili crisp - 2 to 3 tsp - plus more to taste
- Soy sauce or tamari - 2 tbsp - divided
- Chinkiang black vinegar - 1 1/2 tbsp
- Sesame oil - 2 tsp
- Honey - 1 tsp
- White pepper - 1/4 tsp
- Water - 2 tbsp
- Neutral oil - 2 tsp - for cooking
- Salt - 3/4 tsp - divided
Preparation
-
Step 1 - π₯π§π₯Place 2 eggs in a small saucepan and cover with water. Bring to a gentle boil, then reduce to a simmer and cook for 7 minutes. Transfer the eggs to cold water to cool.
-
Step 2 - π₯π«π²Lightly crack and peel the cooled eggs so the shells are crazed but still attached. Return them to the pan with 1 tablespoon soy sauce, 1/2 teaspoon grated ginger, and enough water to barely cover. Simmer gently for 10 minutes, then let them steep off the heat.
-
Step 3 - π₯π π₯In a bowl, toss the cucumbers, tomatoes, scallion, garlic, remaining ginger, black vinegar, 1 tablespoon soy sauce, sesame oil, honey, 1/4 teaspoon salt, and half the toasted sesame seeds. Let the salad sit for 10 minutes.
-
Step 4 - π₯£πΆοΈβ¨Stir the Greek yogurt with 1 teaspoon chili crisp and 1 teaspoon soy sauce until smooth and lightly pink. Chill if you like.
-
Step 5 - π₯π₯’πΏWhisk the remaining 4 eggs with the water, white pepper, 1/2 teaspoon salt, and most of the Chinese chives, saving a small handful of chives for garnish.
-
Step 6 - π³ππ₯Heat a nonstick skillet over medium-low heat with a little neutral oil. Pour in half the egg mixture and swirl into a thin crepe. Cook until just set, 1 to 2 minutes, then slide onto a plate. Repeat with the remaining egg mixture.
-
Step 7 - πͺπ₯πPeel the simmered eggs and cut them in half lengthwise to show the marbled surface.
-
Step 8 - π½οΈπ₯π¨Spread some soy-chili yogurt onto each plate. Fold or roll the egg crepes and place them on the plates. Spoon the cucumber-tomato salad alongside, letting some of the juices spread naturally.
-
Step 9 - πΆοΈπΏβͺTop the crepes with the halved eggs, extra chili crisp to taste, the reserved Chinese chives, cilantro leaves, and the remaining toasted sesame seeds.
-
Step 10 - β¨π΄πServe right away while the crepes are warm and the salad is cool for the best texture and flavor.
Additional
If you want to make it heartier, add a small side of chilled sesame noodles or a toast soldier brushed with scallion oil. For extra color, use mixed heirloom tomatoes. Chinese chives have a gentle garlicky note that makes the eggs especially fragrant and less predictable than standard scallions.
