This heat-friendly Mediterranean smoothie leans crisp, green, and unexpectedly luxurious. Quick-blanched okra adds a silky body without heaviness, while cucumber, green grapes, mint, basil, and lemon keep it bright and cooling. A spoonful of tahini brings a subtle Levantine nuttiness, and chilled yogurt makes it creamy, tangy, and deeply refreshing.
Ingredients (for 4)
- Okra - 8 oz - trimmed
- Persian cucumber - 1 large - roughly chopped
- Green grapes - 2 cups - chilled
- Plain greek yogurt - 1 1/2 cups - chilled
- Tahini - 2 tbsp
- Fresh lemon juice - 3 tbsp
- Lemon zest - 1 tsp - finely grated
- Fresh mint leaves - 1/2 cup loosely packed
- Fresh basil leaves - 1/4 cup loosely packed
- Honey - 1 to 2 tbsp
- Ice cubes - 1 1/2 cups
- Cold water - 1/2 to 3/4 cup - as needed
- Shelled pistachios - 2 tbsp - finely chopped for garnish
- Green grapes - 8 - halved for garnish
- Mint leaves - 8 small - for garnish
- Salt - 1 small pinch
Preparation
