This heat-friendly Mediterranean smoothie leans crisp, green, and unexpectedly luxurious. Quick-blanched okra adds a silky body without heaviness, while cucumber, green grapes, mint, basil, and lemon keep it bright and cooling. A spoonful of tahini brings a subtle Levantine nuttiness, and chilled yogurt makes it creamy, tangy, and deeply refreshing.
Ingredients (for 4)
- Okra — 8 oz — trimmed
- Persian cucumber — 1 large — roughly chopped
- Green grapes — 2 cups — chilled
- Plain greek yogurt — 1 1/2 cups — chilled
- Tahini — 2 tbsp
- Fresh lemon juice — 3 tbsp
- Lemon zest — 1 tsp — finely grated
- Fresh mint leaves — 1/2 cup loosely packed
- Fresh basil leaves — 1/4 cup loosely packed
- Honey — 1 to 2 tbsp
- Ice cubes — 1 1/2 cups
- Cold water — 1/2 to 3/4 cup — as needed
- Shelled pistachios — 2 tbsp — finely chopped for garnish
- Green grapes — 8 — halved for garnish
- Mint leaves — 8 small — for garnish
- Salt — 1 small pinch

Step 1 — 🫕🥬⏱️Bring a small pot of water to a boil. Add the trimmed okra and cook for 2 minutes, until bright green and just barely tender.
