- Shiitake mushrooms — 4 oz — stems removed and sliced
- Scallions — 2 — thinly sliced
- Vegetable oil — 1 tbsp
- Fresh ginger — 1 tbsp grated
- Garlic cloves — 2 — minced
- Soy sauce — 2 tbsp
- Mirin — 1 tbsp
- Sesame oil — 1 tsp
- Salt — to taste
- Pepper — to taste
