Ingredients (for 2)
- Soba noodles - 4 oz
- Snap peas - 4 oz - trimmed
- Shiitake mushrooms - 4 oz - stems removed and sliced
- Scallions - 2 - thinly sliced
- Vegetable oil - 1 tbsp
- Fresh ginger - 1 tbsp grated
- Garlic cloves - 2 - minced
- Soy sauce - 2 tbsp
- Mirin - 1 tbsp
- Sesame oil - 1 tsp
- Salt - to taste
- Pepper - to taste

Step 1 - ππ§π₯Cook soba noodles according to package instructions, and set aside.

Step 2 - πΆπ₯π«In a small bowl, whisk together soy sauce, mirin, and sesame oil, set aside.

Step 3 - π΄π₯¦πHeat oil in a large skillet over medium-high heat. Add snap peas and cook for 2-3 minutes, until bright green and tender, add shiitake mushrooms and continue to cook for another 3-4 minutes until they start to release liquid.

Step 4 - π¨π§πReduce heat to medium and add ginger and garlic into the pan, cook until fragrant.

Step 5 - πΆοΈπ΄π«Add sauce and cook for 1-2 minutes, until the sauce thickens.

Step 6 - π₯£π½οΈπ΄Divide noodles between 2 bowls, top with stir-fry mixture and garnish with scallions. Serve and enjoy!

Vary the vegetables based on what's in season or what's in your fridge. You could also add a protein of your choice like crispy tofu or chicken in this recipe.
