This Tex-Mex inspired dish is untraditional but truly delectable. We're showcasing fresh spinach in a fun and flavorful way, paired with tender chicken and smoky chipotle for a hint of heat.
Ingredients (for 2)
- Fresh spinach - 2 large handfuls - roughly chopped
- Boneless, skinless chicken breasts - 2 - cooked and shredded
- Garlic - 1 clove - minced
- Creme fraiche - 1/2 cup
- Shredded cheddar cheese - 1/2 cup
- Tortilla boats - 2 large
- Smoked chipotle enchilada sauce - 1/2 can
- Cumin - 1/2 tablespoon
- Salt - to taste
- Pepper - to taste
- Olive oil - 2 tablespoons
- Fresh cilantro - for garnish - chopped
Preparation

Step 1 - π‘οΈπ₯β²οΈPreheat your oven to 375Β°F.

Step 2 - π³π₯π§In a large pan, heat 2 tablespoons of olive oil over medium heat. Add 1 minced clove of garlic and cook until fragrant.

Step 3 - π³πΏβ«Introduce 2 large handfuls of fresh spinach to the pan, and sautΓ© until wilted.

Step 4 - ππ₯π₯Mix in 2 cooked, shredded chicken breasts, 1/2 cup of creme fraiche, 1/2 tablespoon of cumin, and some salt and pepper to taste. Stir until the blend is coated in the creamy sauce.

Step 5 - π₯πΆοΈπ₯Pour a thin layer of 1/2 can smoked chipotle enchilada sauce at the bottom of your baking dish.

Step 6 - π₯πΆπ₯Spoon the spinach and chicken mixture into 2 large tortilla boats, then place them in the baking dish.

Step 7 - πΆοΈπ§πCover the enchilada boats with the rest of the enchilada sauce, then sprinkle 1/2 cup of shredded cheddar cheese on top. Cover the dish with foil.

Step 8 - π₯β²οΈπ§Bake for 20 minutes, then remove the foil and continue baking for another 10 minutes, or until the cheese is bubbly and golden.

Step 9 - πππSprinkle some fresh-chopped cilantro on the enchiladas before serving.
Additional
This dish is easily adjustable for heat levels. For those who like it hot, feel free to add more chipotle. If your diet allows, some black beans or sweet corn can be added to the mix for even more texture and flavor.
