This quick spring-inspired dish turns earthy beets into a vibrant, glossy topping for crispy sourdough toast, then balances them with whipped goat cheese, lemon, herbs, and crunchy pistachios. Ingredients (for 4)
- Beet - 3 medium - roasted and peeled
- Goat cheese - 5 oz - softened
- Plain greek yogurt - 1/3 cup
- Sourdough bread - 8 slices - cut 1/2-inch thick
- Pistachios - 1/3 cup - roughly chopped
- Fresh dill - 2 tbsp - chopped
- Fresh parsley - 2 tbsp - chopped
- Lemon - 1 - zested and juiced
- Honey - 2 tsp
- Dijon mustard - 1 tsp
- Garlic - 1 small clove - finely grated
- Black pepper - 1/2 tsp - freshly ground
- Olive oil - 3 tbsp
