American Brunch with Pear-Bourbon French Toast and Bacon Crumble

Ingredients (for 2)
- Ripe, firm pears - 2 - cored and thinly sliced
- Lemon juice - 1 tablespoon
- Bourbon - 3 tablespoons
- Brown sugar - 2 tablespoons
- Thick white bread - 4 slices
- Large eggs - 2
- Whole milk - 1/2 cup
- Ground cinnamon - 1/2 teaspoon
- Bacon strips - 4 - cooked and crumbled
- Mint leaves - for garnish
- Powdered sugar - for dusting
- Unsalted butter - 1/4 cup - for frying
- Salt - to taste

Step 1 - 🍐🥄🔥In a medium saucepan, mix the pears, lemon juice, bourbon, and brown sugar. Cook while stirring occasionally until the pears are tender and syrupy, for about 10 - 15 minutes. Maintain it warm.

Step 2 - 🥚🥛🧂🍞Whisk together eggs, milk, cinnamon, and a pinch of salt in a large bowl. Dip each slice of bread into the mixture. Make sure both sides of each slice are well coated.

Step 3 - 🍳🍞🔥Melt half of the butter over medium heat in a large skillet. Cook 2 bread slices at a time until each side is golden brown, about 2 - 3 minutes per side. Repeat with the remaining bread and butter.

Step 4 - 🍽️🍐🥓🌱Serve 2 slices of French Toast per plate, add the pear compote on top, sprinkle with crumbled bacon, garnish with mint leaves, and dust with a thin layer of powdered sugar.
Additional
The pear compote can be made ahead and refrigerated. It's wonderful warm or chilled. For vegetarian version, skip the bacon or replace with vegetarian bacon. Kids can help dip the bread in the egg mixture and assemble the final dish.
