Reimagine your pasta experience with this autumn-inspired Radicchio Penne Pasta recipe. The subtly bitter flavor of the Radicchio, balanced with the richness of Gorgonzola and pancetta's salty punch, gives this dish a profound flavor thatβs hard not to fall in love with.
Ingredients (for 2)
- Medium-sized radicchio - 1 - thinly sliced
- Penne pasta - 200 grams
- Pancetta - 100 grams - diced
- Gorgonzola cheese - 100 grams - crumbled
- Garlic cloves - 2 - minced
- Olive oil - 2 tablespoons
- Salt and ground black pepper - to taste

Step 1 - π π² π§Boil your penne pasta in a large pot of salted water until al dente. Once cooked, drain and set it aside for later.

Additional
This dish shines because of its bold flavors, but if you're not a fan of Gorgonzola, substitute it with Parmesan or another cheese that melts well. For vegetarians, omit pancetta and use a bit more olive oil. Kids can help by tearing the radicchio and crumbling the cheese.
