Shaking up the breakfast table with a fresh and untraditional ingredient: mussels. Briny mussels combined with creamy scrambled eggs and smoky bacon make a stunning breakfast delight.
Ingredients (for 2)
- Fresh mussels - 12 - cleaned and debearded
- Smoked bacon - 4 strips - diced
- Large eggs - 4
- Cream - 2 tablespoons
- Salt and pepper - to taste
- Garlic clove - 1 - finely chopped
- Chives - 1 tablespoon - chopped
- Rye bread - 2 slices
- Butter - 1 tablespoon
Preparation

Step 1 - 🍳🥓🔥In a pan, cook the diced bacon until it's crisp. Once done, remove the bacon and keep the fat in the pan.

Step 2 - 🍳🐚🔥Add the clean mussels in the same pan with the bacon fat. Cover the pan, cook on medium-high heat until all mussels open. Once cooked, set aside.

Step 3 - 🥚🥣🧂Beat the eggs, cream, salt, and pepper together in a bowl. Mix well until combined.

Step 4 - 🥘🧄🍳In a separate pan, melt the butter and gently cook the finely chopped garlic. Be careful not to brown it. Pour in the egg mixture and cook on medium-low heat, stirring continuously until creamy and almost set. Remove from heat.

Step 5 - 🍞🔥💛Toast the rye bread slices until golden brown.

Step 6 - 🥘🐚🍞Add the cooked mussels and bacon bits into the scrambled eggs and gently mix. Spoon the mixture over the toast slices. Sprinkle with chopped chives before serving.
Additional
For those who love spicy kick to their breakfast, a little sprinkle of chili flakes would be a great addition. Kids can help with whisking the eggs or washing the mussels. This dish is also a great way to introduce mussels to the younger palate.
