Ingredients (for 2)
- Sea bass fillets - 2
- Red oranges - 2 - thinly sliced
- Fennel bulb - 1 - thinly sliced
- Pomegranate seeds - 1 tbsp
- Tzatziki sauce - 100g
- Mint leaves - handful
- Olive oil - 2 tbsp
- Sea salt - to taste
- Black pepper - to taste
- Lemon - 1 - halved
- Dill - handful - finely chopped
- Garlic clove - 1 - minced

Step 1 - 🔥⏲️🧑🍳Preheat your oven to 375°F (190°C).

Step 2 - 🐟🍋🧂Rub the Sea Bass fillets with 2 tablespoons of Olive Oil, Sea Salt, Black Pepper, and juice from half of your Lemon. Place the seasoned fillets on a baking sheet.

Step 3 - 🐟🔥⏲️Put your baking sheet in the preheated oven and let the Sea Bass fillets bake for 15-20 minutes until they become flaky and golden.

Step 4 - 🥗🍊🍃As the Sea Bass bakes, make your salad by tossing the thinly sliced Red Oranges, Fennel slices, and handful of Mint Leaves together in a bowl. Then, sprinkle over 1 tablespoon of Pomegranate Seeds.

Step 5 - 🥣🍋🧄Create your Tzatziki Aioli by mixing 100g of Tzatziki Sauce with your minced Garlic Clove, juice from the other Lemon half, and a finely chopped handful of Dill.

Step 6 - 🍽️🐟🥗Finally, to serve the dish, evenly divide the salad between two plates, placing the baked Sea Bass fillet next to the salad on each plate. Artfully smear your Tzatziki Aioli onto each plate and garnish with extra Dill, if desired.
