Taking inspiration from the smoky flavors of BBQ and sophisticated textures of French cuisine, we present a magnificent fusion dish, powered by the surprising tangy sweetness of pomegranate. Our star ingredient, pomegranate, gives the dish an unexpected freshness, while the seasonality is celebrated with other autumnal ingredients playing a supporting role.

Preparation

    Preheat your BBQ to high setting.
  2. Step 2 - 🦆🧂🍴
    Score the duck skin and season with salt, pepper, and balsamic vinegar. Sear the duck on the BBQ, skin side down, till it's crisp and golden. Flip and cook until it reaches your desired level of doneness. Let it rest.
  3. Step 3 - 🍠🧄🔪
    While the duck is resting, peel the sweet potatoes, boil them and then mash with a pinch of salt, minced garlic, and a drizzle of olive oil.
  4. Step 4 - 🍯🍶🔥
    Simmer the juice of two medium pomegranates over medium heat until it's reduced to a syrup-like consistency. Stir a tablespoon of butter into the glaze until completely melted.
  5. Step 5 - 🍽️🍖🍯
    Generously brush the ducks with the pomegranate glaze. Put them back on the BBQ grill for a few more minutes until the glaze is beautifully caramelized.
  6. Step 6 - 🍠🦆🌿
    To serve, spread a spoonful of sweet potato purée on the plate, place a duck breast over it, drizzle some pomegranate glaze, scatter pomegranate arils over the top and garnish with fresh chopped thyme.
