In honour of National French Fries Day, we're transforming this popular fast food staple into a gourmet delight. Our version features hand-cut russet potatoes double-fried for that satisfying crispiness, then elevated with a lavish drizzle of black truffle oil and sprinkling of parmesan shavings to make it luxuriously memorable. Let's celebrate the day in style!
Ingredients (for 4)
- Russet potatoes — 4 large — hand-cut into fries
- Vegetable oil — enough to fill the pan up to 3 inches
- Black truffle oil — 2 tablespoons — for drizzling
- Parmesan cheese — about 1 cup — freshly shaved
- Chives — 2 tablespoons — finely chopped
- Salt — to taste

Step 1 — 🧽🥔✂️Wash and cut 4 large Russet potatoes into evenly-sized fries. Make sure they are dried thoroughly.

Step 2 — 🍳🥔🛢️Heat vegetable oil in a deep pan to 300°F (150°C). In small batches, fry the potatoes for about 5 minutes, until they are soft but not browned. Let them drain on a cooling rack with kitchen paper underneath.

Step 3 — 🔥🍳🥔Increase the heat of the oil to 375°F (190°C). Re-fry the potatoes in small batches again, until they're golden and crispy. Let them drain on the cooling rack.

Step 4 — 🧂🧀🌿Sprinkle the hot fries with salt, followed by generous shavings of roughly 1 cup of fresh Parmesan. Drizzle with 2 tablespoons of black truffle oil and finish with a sprinkle of 2 tablespoons of finely chopped chives. Serve immediately.
