Golden, crispy fries with slivers of off-white parmesan mingled within, served on a matte black ceramic serving dish. Drizzles and puddles of the glossy, dark truffle oil punctuate the golden landscape of the fries, accented by the vibrant green of finely chopped chives. The dish effuses an elegant rusticity.

Let's celebrate the day in style!

Ingredients (for 4)

Preparation

  1. Step 1 - 🧽🥔✂️
Wash and cut 4 large Russet potatoes into evenly-sized fries. Make sure they are dried thoroughly.
  2. Step 2 - 🍳🥔🛢️
Heat vegetable oil in a deep pan to 300°F (150°C). In small batches, fry the potatoes for about 5 minutes, until they are soft but not browned. Let them drain on a cooling rack with kitchen paper underneath.
  3. Step 3 - 🔥🍳🥔
Increase the heat of the oil to 375°F (190°C). Re-fry the potatoes in small batches again, until they're golden and crispy. Let them drain on the cooling rack.
  4. Step 4 - 🧂🧀🌿
Sprinkle the hot fries with salt, followed by generous shavings of roughly 1 cup of fresh Parmesan. Drizzle with 2 tablespoons of black truffle oil and finish with a sprinkle of 2 tablespoons of finely chopped chives. Serve immediately.
