Ingredients (for 4)
- Large onion - 2 - thinly sliced
- Chorizo - 150g - sliced
- Jar of piquillo peppers - 1 - drained and chopped
- Large potato - 3 - peeled and thinly sliced
- Egg - 6 - whisked
- Parsley - a handful - chopped
- Olive oil - for cooking
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🥘🧅🔥Heat 3 tablespoons of olive oil in a non-stick pan, add the thinly sliced onions. Cook on low heat until they're caramelized, this should take around 15-20 minutes.

Step 2 - 🔥🥘🍖Increase the heat to medium, add the sliced chorizo and cook until they become crispy.

Step 3 - 🥔🧂🥚Layer the sliced potatoes in the pan, season with salt and pepper, then pour the whisked eggs over the top.

Step 4 - 🥘🌶️🌿Scatter the chopped piquillo peppers and chopped parsley over the top.

Step 5 - 🍳⏲️⬇️Cover the pan with a lid and cook on low heat for 15-20 minutes. Flip the tortilla carefully and cook the other side for an additional 10-15 minutes, until the eggs are set.

Step 6 - ⏰🔪🍽️Let the tortilla rest for a few minutes, then cut it into wedges and serve.

This Spanish-inspired tortilla can easily transform from brunch to a lunchtime affair. Just throw in some dressed salad greens for a wonderful, filling meal.
