Our recipe today captures the spirit of New Year's Eve in the shape of a dessert you won't forget! Our main player is champagne, yes, you heard it right, we are infusing champagne into our dessert. We are creating a frozen delight -- 'Champagne Sorbet Stuffed Chocolate Covered Strawberries'. This dessert is an elegant mix of a refreshing champagne sorbet and rich, dark chocolate covered strawberries.
Ingredients (for 12)
- Large strawberries - 12 - washed and dried
- Your favorite champagne - 1 bottle
- Granulated sugar - ΒΎ cup
- Lemons - Juice of 2
- Dark chocolate - 200g - or vegan chocolate
- Coconut oil - 2 tablespoons - or other neutral oil
- Edible gold leaf - for garnish

Step 1 - πΎππ¨Combine champagne, sugar, and lemon juice in a low heat saucepan until sugar dissolves. Let it cool, then churn in ice-cream maker or freeze and whisk every hour.

Step 2 - πβοΈπ³Hollow out the center of each strawberry from the bottom, ensuring the strawberry remains intact.

Step 3 - ππ¨πΌOnce the champagne sorbet is ready, fill each strawberry using a piping bag and transfer them back to the freezer.

Step 4 - π«π₯₯π₯Melt the chocolate with the coconut oil in a heatproof bowl over simmering water.

Step 5 - ππ«π§Dip each sorbet-filled strawberry into the melted chocolate and let excess drip off before placing back onto a platter to set in the refrigerator.

Step 6 - πππ½Using precision tweezers, garnish each strawberry with an edible gold leaf. Arrange your strawberries to form '2026' on a plate.

Edible gold leaf might seem a bit extra, but why not end the year on a high note! If you're making this with kids, they'll love helping to fill and dip the strawberries. And for a non-alcoholic version, simply replace the champagne with a sparkling grape juice.
