Epicureans by heart, we're introducing a twist on brunch that blends the profound flavors of Chinese cuisine with seasonal bounty. The star of the show is Brussels sprouts, enhanced with tantalizing spices and combined with smoky tofu and fluffy scrambled eggs to create a feast for your taste buds.
Ingredients (for 4)
- Brussels sprouts - 400g - halved
- Smoked tofu - 200g - cut into cubes
- Eggs - 8 - whisked
- Asian chili sauce - 3 tablespoons
- Garlic - 3 cloves - minced
- Sesame oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sesame seeds - 1 teaspoon
- Green onions - 2 - chopped

Step 1 - 🍳🥬⏲️In a preheated skillet, add sesame oil and halved Brussels sprouts face down to char for 5-7 minutes until slightly blackened.

Step 2 - 🍳🧄🥣Stir in smoked tofu cubes and minced garlic, keep stirring until tofu is evenly browned. This may take about 5 minutes.

Step 3 - 🍳🌶️🥢Drizzle soy sauce and Asian chili sauce over the pan, mix well to coat the sprouts and tofu. Lower the heat and let it simmer for 3-5 minutes.

Step 5 - 🍲🥚🍴Divide the sprout-tofu stir-fry into four bowls. Top each with scrambled eggs, sprinkle with sesame seeds and garnish with chopped green onions and serve immediately.
Additional
Add a twist to the recipe by serving it over a bed of steamed jasmine rice. You can also include other vegetables like peppers or snow peas for extra crunch. And remember, kids can help here by whisking the eggs or gathering the ingredients!
