From above, each plate shows a vivid saffron-orange swoosh of sweet-potato purée topped with deeply charred cauliflower wedges and golden paneer. Ruby blistered grapes, chopped cilantro, green curry leaves, and pistachio shards create jewel-like color and an elegant scattered finish.

A little about this dish

This Indian-inspired plate swaps a traditional curry for dramatic contrasts: charred cauliflower and golden paneer over saffron-scented sweet-potato purée. Blistered early-fall grapes become a tart mustard-seed kasundi-style relish, adding jewel-like color, acidity, and a surprising sweetness.

Ingredients (for 2)

  • Small cauliflower — 1 (about 1 1/4 pounds) — trim; cut through the core into 2 thick wedges; break remaining florets into bite-size pieces
  • Large sweet potato — 1 (about 12 ounces) — peel and cut into 1-inch cubes
  • Paneer — 6 ounces — cut into 1-inch slabs or cubes
  • Seedless red or black grapes — 1 cup — halve
  • Plain greek yogurt — 1/2 cup — divide
  • Raw cashews — 2 tablespoons — soak in hot water for 10 minutes and drain
  • Fresh ginger — 1 1/2 tablespoons — finely grate and divide
  • Garlic — 2 cloves — finely grate
  • Garam masala — 1 1/2 teaspoons
  • Ground cumin — 1 teaspoon — divide
  • Kashmiri chili powder or sweet paprika — 1/2 teaspoon
  • Ground turmeric — 1/4 teaspoon
  • Saffron threads — 1/4 teaspoon — steep in 1 tablespoon hot water
  • Brown or black mustard seeds — 1 1/2 teaspoons
  • Tamarind concentrate — 1 1/2 teaspoons
  • Jaggery or maple syrup — 1 teaspoon
  • Fresh curry leaves — 8 leaves
  • Small lime — 1 — juice; cut into wedges for serving
  • Fresh cilantro leaves — 1/4 cup — roughly chop
  • Roasted pistachios — 2 tablespoons — roughly chop
  • Water — 2 to 4 tablespoons, as needed — warm
  • Neutral oil or ghee — 2 tablespoons — divide
  • Kosher salt — 1 1/4 teaspoons — divide

Preparation

  1. Step 1 — 🔥🧂
Heat the oven to 450°F and line a rimmed baking sheet with parchment. Steep the saffron threads in 1 tablespoon hot water and set aside.
  2. Step 2 — 🍠🥄
Toss the sweet-potato cubes with 1/2 tablespoon oil, turmeric, 1/4 teaspoon cumin, and 1/4 teaspoon salt. Roast for 10 minutes.
  3. Step 3 — 🥣🧄🌶️
Whisk 1/4 cup yogurt with 1 tablespoon ginger, garlic, garam masala, 1/2 teaspoon cumin, chili powder, 1/2 tablespoon oil, 1/2 teaspoon salt, and 1/2 tablespoon lime juice. Reserve 3 tablespoons for the paneer, coat the cauliflower with the rest, and let stand for 10 minutes. Gently coat the paneer with the reserved marinade.
  4. Step 4 — 🥦🍠🔥
Move the sweet potatoes to one side of the baking sheet and add the marinated cauliflower. Roast for 18 to 22 minutes, turning the smaller florets once, until tender and caramelized. Broil for 1 to 2 minutes for extra char, removing the sweet potato when fork-tender.
  5. Step 5 — 🍇🌿🍯
Heat a skillet over medium-high heat. Add 1 teaspoon remaining oil, the mustard seeds, and curry leaves. When the seeds pop, add the halved grapes and cook for 3 to 4 minutes. Stir in the tamarind, jaggery, 2 tablespoons warm water, and a pinch of salt. Cook for 2 minutes, lightly crushing a few grapes.
  6. Step 6 — 🍠🥜🌀
Cool the roasted sweet potato for 5 minutes. Blend it with the soaked cashews, remaining 1/4 cup yogurt, saffron water, remaining ginger, remaining lime juice, and 2 to 4 tablespoons warm water until completely smooth. Add water gradually and adjust the salt to taste.
  7. Step 7 — 🧀🍳✨
Wipe out the skillet and heat it over medium-high heat. Add the remaining oil and sear the paneer for 2 to 3 minutes per side, until deeply golden at the edges.
  8. Step 8 — 🍽️🌿🥜
Spoon the sweet-potato purée onto two plates. Arrange the charred cauliflower and golden paneer on top, then add generous spoonfuls of blistered-grape kasundi. Finish with chopped cilantro, roasted pistachios, curry leaves, and lime wedges.

A final fox tip

Kasundi is a Bengali mustard relish; this version uses blistered grapes for a seasonal sweet-tart twist. For a vegan variation, replace the paneer with extra-firm tofu and use unsweetened plant yogurt. The purée and relish can be prepared a day ahead and gently rewarmed before plating.
