For this recipe, we're putting a unique spin on a classic French dish. The nutty bitterness of chicory is expertly balanced with creamy, salted cod and fragrant thyme, delivering a dish that is warming, flavorful and perfect for a chilly day.
Ingredients (for 2)
- Whole chicory - 2 - halved (down the middle)
- Salt cod - 200g - soaked overnight
- Cloves of garlic - 3 - crushed
- Lemon - 1/2 - juiced
- Sprigs of fresh thyme - 4
- Cooking cream - 2 tablespoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Freshly cracked black pepper - to taste

Step 1 - 🌡️⏲️🔥Preheat the oven to 180°C / 356°F.

Step 2 - 🥬💧🔥Place the chicory halves on a roasting tray, drizzle with half the olive oil, a squeeze of lemon juice, and seasoning. Roast for 40 minutes, until tender and lightly caramelized.

Step 3 - 🐟💦🍳Rinse the soaked salt cod. Put it in a saucepan, cover with water, and simmer for 15-20 minutes until it becomes flaky.

Step 4 - 🍚💧🐟Drain the cod while keeping a cup of the liquid aside. Flake the cod into a bowl and remove any bones.

Step 5 - 🍳🧄🥛Heat remaining olive oil in a saucepan and sauté one garlic clove. Add cream, simmer for 2 minutes, then add in the flaked cod. Mix thoroughly and adjust seasoning.

Step 6 - 🥣🍋🥢Mash the cod mixture coarsely, adding a spoonful of reserved poaching liquid for a creamier consistency. Stir in a tablespoon of the lemon juice.
