Ingredients (for 4)
- Raspberries — 1 1/2 cups — divided; 1 cup for sauce and 1/2 cup for garnish
- Salmon fillets — 4 fillets (about 6 oz each) — patted dry
- Buckwheat noodles or naengmyeon-style noodles — 12 oz
- Korean cucumber or persian cucumbers — 2 — shaved into ribbons
- Red onion — 1 small — very thinly sliced
- Rice vinegar — 1/2 cup — divided
- Perilla leaves or mint and basil — 8 to 12 — thinly sliced
- Fresh mint leaves — 1/2 cup loosely packed
- Gochujang — 3 tbsp
- Soy sauce — 3 tbsp
- Toasted sesame oil — 2 tbsp
- Lime juice — 2 tbsp
- Honey — 2 tbsp
- Garlic — 2 cloves — finely grated
- Fresh ginger — 1 tbsp — finely grated
- Sesame seeds — 2 tbsp — toasted
- Neutral oil — 1 tbsp
- Kosher salt — 1 1/2 tsp — divided
- Sugar — 1 tbsp
