- 1 medium fennel bulb - 1 - thinly sliced using a mandolin
- 2 oranges - 2 - peeled and thinly sliced
- 1 pink grapefruit - 1 - peeled and thinly sliced
- 100 grams feta cheese - 100 grams - crumbled
- Fresh mint leaves - for garnish
- 2 tbsp extra virgin olive oil - 2 tbsp
- 1 tbsp lemon juice - 1 tbsp
- 1 tbsp honey - 1 tbsp
- Salt - to taste
- Pepper - to taste
