This rapid dish is a palatable fusion of Mexican cuisine, while presenting cauliflower in a fresh new light. The key ingredients are cauliflower and corn, quickly marinated to perfection, making a surprising hero of this humble vegetable.
Ingredients (for 2)
- Large cauliflower - 1 - cut into small florets
- Cup fresh sweetcorn - 1/2 - cut from the cob
- Handful fresh coriander - 1 - finely chopped
- Salsa verde - 4 tablespoons
- Lime - 1 - juiced
- Cumin - 1/2 teaspoon
- Garlic cloves - 2 - minced
- Small gluten-free taco shells - 4
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🥦🌽🍋In a large mixing bowl, take cauliflower florets, sweetcorn, garlic, lime juice, cumin, salt, and black pepper. Toss and mix these ingredients together till they are all well coated with the spices.

Step 2 - 🍳🔥🌮Heat olive oil in a large skillet or frying pan over medium-high heat. Add the spiced cauliflower and corn mixture to it. Keep stirring occasionally until the cauliflower is golden brown and crispy, which should take around 7-10 minutes.
