Cooking the chicken in red wine, instead of white wine makes it heartier, warm and cozy, perfect for New York winter weather. The dish is fragrant and flavorful, making it perfect for a romantic dinner for two.

    Preheat the oven to 350 degrees F.

    Heat olive oil in an ovenproof Dutch oven over medium-high heat.

    Season chicken with salt and pepper and place in the Dutch oven. Brown chicken for 2-3 minutes on each side. Remove chicken from Dutch oven and set aside.

    Add onions, garlic, mushrooms, turnips, and carrots to the Dutch oven and cook for 5 minutes.

    Return chicken to the Dutch oven. Sprinkle chopped thyme on top of the chicken.
