This recipe is inspired by the French classic dish, Coq au Vin. We've given it a gluten-free twist and made it seasonal, using winter vegetables with tender chicken thighs. Cooking the chicken in red wine, instead of white wine makes it heartier, warm and cozy, perfect for New York winter weather. The dish is fragrant and flavorful, making it perfect for a romantic dinner for two.
Ingredients (for 2)
- Chicken thighs, skin on - 4
- Red wine - 2 cups
- Onion - 1 - chopped
- Garlic cloves - 2 - chopped
- Chicken stock - 1/2 cup
- Mushrooms - 10 oz - sliced
- Carrots - 2 - chopped
- Turnips - 2 - chopped
- Fresh thyme - 1 tsp - chopped
- Olive oil - 1 tbsp
- Salt - - to taste
- Pepper - - to taste

Step 1 - ðĄïļððģPreheat the oven to 350 degrees F.

Step 2 - ðĨðŦðģHeat olive oil in an ovenproof Dutch oven over medium-high heat.

Step 3 - ð§ðððŦSeason chicken with salt and pepper and place in the Dutch oven. Brown chicken for 2-3 minutes on each side. Remove chicken from Dutch oven and set aside.

Step 4 - ð§ ð§ððĨðŦððģAdd onions, garlic, mushrooms, turnips, and carrots to the Dutch oven and cook for 5 minutes.

Step 5 - ð·ðððēAdd the red wine and chicken broth, stir and bring to a simmer.

Step 6 - ðððēðŋReturn chicken to the Dutch oven. Sprinkle chopped thyme on top of the chicken.

Step 7 - ððģðĨðĄïļCover the dish and bake for 25-30 minutes, until the chicken is cooked through and the vegetables are tender.

Step 8 - ðð§ðŠīRemove from the oven, season with salt and pepper to taste, and garnish with fresh thyme leaves.

This dish can be modified by using different types of winter vegetables or adding bacon. To include more veggies into the dish, add a side of roasted brussel sprouts or a winter salad. Enjoy this dish with a glass of red wine, like the one that was used for cooking.
