The cold weather calls for a comforting, hearty bowl of soup that's also perfect for a gluten-free diet. This recipe uses seasonal winter vegetables flavored with aromatic herbs, and protein packed ground turkey, making it a nutritious and satisfying option.
Ingredients (for 2)
- Ground turkey - 1 lb
- Onion - 1 small - chopped
- Garlic cloves - 2 - minced
- Carrots - 2 - peeled and chopped
- Parsnips - 2 - peeled and chopped
- Turnip - 1 - peeled and chopped
- Chicken or vegetable broth - 4 cups
- Bay leaf - 1
- Thyme - 2 sprigs
- Salt -
- Pepper -
- Olive oil - 2 tbsp
Preparation

Step 1 - π₯πΆπ°οΈHeat olive oil in a large pot over medium heat.

Step 5 - π₯π₯π₯π²ππ§Add chopped carrots, parsnips, and turnip to the pot, along with broth, bay leaf, thyme, and salt and pepper to taste.

Step 6 - π‘οΈππ¨βπ³Bring the mixture to a boil and reduce the heat to simmer. Cook for 20-25 minutes, until the vegetables are tender and the turkey is cooked through.

Step 7 - π§πβRemove the bay leaf and thyme sprigs from the pot. Adjust seasonings to taste.

Additional
This soup can easily be customized with other seasonal vegetables and herbs. For a creamier texture, puree half of the soup in a blender or with an immersion blender before serving. Kids can help chop the vegetables and garnish the soup with herbs.
