- Cherry tomato — 1 cup — halved
- Scallion — 3 — thinly sliced
- Fresh cilantro leaves and tender stems — 1 cup — divided
- Lime — 2 — zested and juiced
- Pepita — 3/4 cup — divide into 1/2 cup for the pipián and 1/4 cup for the crust
- Masa harina — 1 cup — divide into 1/3 cup for dredging and 2/3 cup for the crust
- Large egg — 2 — beaten with 2 tablespoons water
- Low-sodium vegetable stock — 1 1/2 cups — divided
- Ancho chile powder — 1 teaspoon
- Ground cumin — 1/2 teaspoon
- Ground coriander — 1/2 teaspoon
- Dried mexican oregano — 1/2 teaspoon — crumbled
