The shiitake mushrooms bring their lovely umami taste which perfectly complements the juicy chicken, while the summer veggies add freshness.

    Preheat your grill to medium-high heat.

    Season chicken breasts with salt and pepper, brush with olive oil, then grill until cooked through. This takes about 6-7 minutes on each side. Set aside once done.

    In a pan, sauté the minced garlic in butter until it becomes aromatic. Add the sliced shiitake mushrooms and sauté until they become golden brown.
