The beautiful fusion of American cuisine and shiitake mushrooms is sure to tantalize your taste buds. Succulent grilled chicken breasts paired with a divine shiitake mushroom sauce is a redefining touch to your typical grilled chicken. The shiitake mushrooms bring their lovely umami taste which perfectly complements the juicy chicken, while the summer veggies add freshness.
Ingredients (for 2)
- Shiitake mushrooms - 1 cup - thinly sliced
- Chicken breasts - 2 - skinless, boneless
- Zucchini - 1 medium - sliced into rounds
- Baby corn - 2 - halves lengthwise
- Cherry tomatoes - 1 cup
- Olive oil - 2 tablespoons
- Garlic - 2 cloves - minced
- Butter - 1 tablespoon
- Dry white wine - 1/4 cup
- Heavy cream - 1/2 cup
- Microgreens - for garnish
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🔥☀️🌡️Preheat your grill to medium-high heat.

Step 2 - 🧂🐓🔥Season chicken breasts with salt and pepper, brush with olive oil, then grill until cooked through. This takes about 6-7 minutes on each side. Set aside once done.

Step 3 - 🧄🍄🥘In a pan, sauté the minced garlic in butter until it becomes aromatic. Add the sliced shiitake mushrooms and sauté until they become golden brown.

Step 4 - 🍷🍶🍴Deglaze the pan with dry white wine, let it reduce, then add the heavy cream. Simmer until the sauce thickens. Season with salt and pepper.

Step 5 - 🌽🥒🍅Blanch the baby corn, zucchini slices, and cherry tomatoes for 2-3 minutes in boiling water, then refresh them in ice-cold water. After that, drain and set aside.

Step 6 - 🍽️🍗🥗Pool some mushroom sauce on the plate, place the grilled chicken on top of it, arrange the blanched veggies around, and garnish with microgreens.
Additional
