In honor of the fair weather and the beginning of the BBQ season, this recipe features grilled corn and rib eye with a refreshing avocado and tomato salsa. The sweetness of the corn and the juicy steak will be perfectly balanced by the tangy and creamy salsa. Avocado adds a richness while the tomato brings acidity to the dish. This recipe is ideal for a lovely dinner with good food, drinks, and company.

Preparation

    Preheat grill to medium-high heat.

    Brush the corn and rib eye steak with olive oil and sprinkle generous amounts of salt and pepper.

    Place the corn directly on the grill and cook for 8-10 minutes or until it is charred and cooked through. Once done, remove from the grill and let it cool.

    Grill the rib eye steak for about 4-5 minutes per side until it's medium-rare, or until it's cooked to your preference. Once done, remove from the grill and let it rest.

    Cut the avocado and tomatoes into small cubes and place them in a bowl. Add cilantro, minced garlic, lime juice, chili powder, salt, and pepper to the same bowl. Stir gently until it is combined well.

    Once the rib eye has rested for 5 minutes, slice it into thin, diagonal pieces.
  7. Step 7 - 🌽🔪🍴
    Cut the kernels off the cobs with a sharp knife and place the corn in a serving dish.

    Spoon the avocado and tomato salsa over the corn and on the side of the sliced steak.

For a spicier version, add some diced jalapeno to the salsa. A cold beer or a chilled white wine will go perfectly with this dish and will cool you off on a warm day. To make this dish kid-friendly, you can make mini steak bites and serve them with boiled corn and a mild salsa.
