This recipe is inspired by Spanish cuisine and the BBQ theme, perfect for a sunny day in April. We're using seasonal ingredients like white asparagus and blood oranges to give a unique twist to a classic BBQ dish.
Ingredients (for 4)
- Pork tenderloin - 1 lb. - cut into 1-inch pieces
- Blood oranges - 2 - peeled and segmented
- White asparagus - 1 bunch - trimmed and peeled
- Arugula - 1 cup
- Olive oil - 1/4 cup
- Sherry vinegar - 2 tbsp.
- Smoked paprika - 1 tsp.
- Cumin - 1/2 tsp.
- Salt and pepper -
- Wooden skewers - 4-6 - soaked in water for 30 minutes

Step 1 - π‘οΈπ₯π΄Preheat your grill to medium heat.

Step 2 - π₯πΆπ§In a small bowl, mix together olive oil, sherry vinegar, smoked paprika, cumin, salt and pepper. Set aside.

Step 3 - π’ππͺThread pork onto the skewers.

Step 4 - ποΈπ§πLightly brush the prepared pork skewers with olive oil and season with salt and pepper.

Step 5 - π’π₯π¨βπ³Grill pork skewers for about 10-12 minutes, turning occasionally, until nicely charred and cooked through.

Step 6 - ππ΄πͺ¦Meanwhile, bring a pot of salted water to a boil. Add the white asparagus and blanch until tender, about 4-5 minutes. Shock in cold water and set aside.

Step 7 - π₯ππ’In a large bowl, add the arugula, blood oranges and shaved white asparagus, and toss with the dressing.

Step 8 - π½οΈπ’π₯Serve the grilled pork skewers with the refreshing salad on the side. Enjoy!
