Today's recipe is a succulent fusion of luxurious lobster and exciting Korean flavors, which were meant to be. Remember to source ethically harvested lobster for an eco-friendly touch.
Ingredients (for 4)
- Lobster meat from 2 lobsters - 2 - roughly chopped into popcorn size chunks
- Rice flour - 1 cup
- Corn-starch - 1/2 cup
- Ice cold soda water - 1 cup
- Salt - 1/2 tsp
- White pepper - 1/4 tsp
- Scallions - 1/2 cup - thinly sliced
- Garlic - 4 cloves - minced
- Gochujang chili paste - to taste
- Mayonnaise - 1/2 cup
- Sesame seeds - 2 Tbsp - for garnish
- Canola oil - 2 cups - for frying
- Salt and sugar - Pinch
Preparation

Step 1 - ๐๐ฅฃ๐ฆIn a large mixing bowl, combine 1 cup rice flour, 1/2 cup corn-starch, 1 cup ice cold soda water, 1/2 tsp salt, and 1/4 tsp white pepper to form a batter. Set aside for later use.

Step 2 - ๐ณ๐ฅHeat 2 cups Canola oil in a deep frying pan over medium-high heat.

Step 3 - ๐ฆ๐ฏ๐ณDip the chopped lobster meat into the prepared batter, allow any excess to drip off, then carefully place in the hot oil. Fry until golden brown, about 2-3 minutes.

Step 4 - ๐ฅ๐ฆ๐งปUse a slotted spoon to remove the crispy lobsters and drain them on kitchen paper.

Step 5 - ๐ณโก๐ถ๏ธIn a separate pan, heat a little oil. Add in 4 minced garlic cloves, 1/2 cup thinly sliced scallions, and a spoonful of Gochujang chili paste. Cook for a minute until fragrant.

Step 6 - ๐ฆ๐ถ๏ธ๐ฅAdd 1/2 cup mayonnaise to the sauce and stir until well combined. Toss in the crispy lobsters and mix well until every piece is coated.

Step 7 - ๐ฝ๏ธ๐ง๐Sprinkle 2 tbsp sesame seeds on top. Taste and adjust seasoning with a pinch of salt and sugar if necessary.

Perfect for winter snacking, this dish could also work with shrimps or calamari. You may want to adjust the level of the Gochujang chili paste according to your heat preference. Also, don't forget about pairing this delicious snack with a bottle of soju to warm up your cold day!
