Preparation

  1. Step 1 — 🍓🥘🍯
    In a saucepan, combine 1 cup of fresh mixed berries with 1/2 cup of granulated sugar and simmer until the sugar dissolves. Cool it, blend, and strain to remove seeds to make a berry compote.
  2. Step 2 — 🥛🍶🌸
    In another saucepan, bring together 2 cups of whole milk, 2 cups of heavy cream and 2 tablespoons of food-grade dried lavender buds to a gentle simmer. Turn off the heat and let it steep for 15 minutes.

    In a separate bowl, whisk together 5, large egg yolks and the remaining 1/2 cup of granulated sugar until it turns pale yellow.
  4. Step 4 — 🌡️🔁🥄
    Gradually pour the warm milk mixture into the egg yolks while whisking continuously. Return this mixture to the saucepan and stir on medium heat until it thickens and coats the back of a spoon.

    Strain the mixture into a bowl to remove the lavender buds, stir in 1 teaspoon of pure vanilla extract and a pinch of salt. Allow it to cool to room temperature and then refrigerate for at least 2-3 hours or overnight.

    Churn the mixture in an ice cream maker according to the manufacturer's instructions. Add in the berry compote and the remaining whole berries during the last few minutes to create a swirl pattern.

    After churning, fold in 100 grams of roughly shattered quality white chocolate bar and transfer to a lidded container. Freeze until firm.

    Before serving, leave at room temperature for 5-10 minutes. Top each serving with fresh berries, a sprinkle of lavender buds and a shard of white chocolate.
