This vibrant and cooling recipe is perfect for celebrating Ice Cream Day in the heart of summer. Our key ingredients are fresh berries, lavender, white chocolate, and a good quality vanilla for our homemade ice cream base.
Ingredients (for 6)
- Fresh mixed berries (blackberries, raspberries, and blueberries) - 2 cups - washed and divided
- Dried lavender buds - 2 tablespoons - food-grade
- Whole milk - 2 cups
- Heavy cream - 2 cup
- Granulated sugar - 1 cup
- Egg yolks - 5 - large
- Pure vanilla extract - 1 teaspoon
- Quality white chocolate bar - 100 grams - roughly shattered into shards
- Salt - pinch

Step 1 - ππ₯π―In a saucepan, combine 1 cup of fresh mixed berries with 1/2 cup of granulated sugar and simmer until the sugar dissolves. Cool it, blend, and strain to remove seeds to make a berry compote.

Step 2 - π₯πΆπΈIn another saucepan, bring together 2 cups of whole milk, 2 cups of heavy cream and 2 tablespoons of food-grade dried lavender buds to a gentle simmer. Turn off the heat and let it steep for 15 minutes.

Step 3 - π₯π₯£πIn a separate bowl, whisk together 5, large egg yolks and the remaining 1/2 cup of granulated sugar until it turns pale yellow.

Step 4 - π‘οΈππ₯Gradually pour the warm milk mixture into the egg yolks while whisking continuously. Return this mixture to the saucepan and stir on medium heat until it thickens and coats the back of a spoon.

Step 5 - πΈπ₯£βοΈStrain the mixture into a bowl to remove the lavender buds, stir in 1 teaspoon of pure vanilla extract and a pinch of salt. Allow it to cool to room temperature and then refrigerate for at least 2-3 hours or overnight.

Step 6 - π¦ππChurn the mixture in an ice cream maker according to the manufacturer's instructions. Add in the berry compote and the remaining whole berries during the last few minutes to create a swirl pattern.

Step 7 - π«π₯Άπ¬οΈAfter churning, fold in 100 grams of roughly shattered quality white chocolate bar and transfer to a lidded container. Freeze until firm.
